General Information
- Master of Science degree
- Program emphasis is applied dietetics
- Degree is awarded only to Registered Dietitians and those who are eligible for registration
- Degree program is 30 hours (thesis option) or 36 hours (non-thesis option)
- All students complete individual projects: thesis or multi-quarter project (non-thesis option)
- Specialized courses offered evenings by online interactive video to accommodate working dietitians
- Course work offered in conjunction with dietetic internship for students who wish to complete both programs
- Graduate assistantships and scholarships available
- Human Ecology 504: Research Methodology (3 hours)
- Human Ecology 546: Microcomputer Applications of Research (3 hours)
- Statistics 402: Introduction to Statistics (3 hours) OR Statistics 405: Statistical Methods (3 hours) OR Psychology 542: Statistical Methods in Behavioral Sciences (3 hours)
- Human Ecology 551: Thesis (6 hours) OR Human Ecology 506: Multi-quarter project (6 hours)
- Food and Nutrition Courses (9 hours minimum for thesis option or 12 hours minimum for non-thesis option)
- 6-9 additional hours to be chosen from Food and Nutrition courses or other approved electives

F&NU 533: Vitamins and Minerals in Human Nutrition (3 hours)
F&NU 543: Community Nutrition and Wellness Programs (3 hours)
F&NU 553: Clinical Management and Private Practice in Dietetics (3 hours)

F&NU 503: World Nutrition Problems (3 hours)
F&NU 523: Recent Advances in Medical Nutrition Therapy (3 hours)

F&NU 562: Trends in Food Systems Administration
- Completion of ADA Didactic Program requirements
- Minimum 2.75 GPA overall or on last 60 hours
- Satisfactory scores of Graduate Record Exam
